Puran Poli ani Katachi Amti (Whole Naivedyam Platter with Batatyachi bhaji, Kanda bhaji and Vatli dal) – Maharashtrian Recipe

Puran poli is very popular traditional Maharashtrian delicacy and it is made on the occasion of festivals like Holi, Diwali, Ganesh Chaturthi and many more. We always make puran poli with wheat flour but it can also be made with all purpose flour. Making dough with wheat flour needs little more efforts while kneading. Total kneading process may take around 35-40 minutes.
Today I am sharing my mom’s way of making puran poli. There are actually two ways to roll puran poli. One is using flour called ‘Pitha varchi poli ’and another is with oil called ‘Tela varchi poli’. The one I am sharing today is ‘pitha varchi poli’ (flour is used while rolling). Second one needs little practice. I have consolidated all recipes together for Naivedhyam Platter. It consists of puran poli, katachi aamti, batatyachi bhaji, vatli dal, and kanda bhaji.

Ingredients

For Puran (filling for poli)

  • Chana dal – 1 and 1/2 cups
  • Jaggery – 1 cup
  • Sunth (dry ginger) powder – 1 tsp
  • Pinch of salt

For outer cover

  • Wheat flour – 2 and 1/2 cups
  • Oil – 1 tsp
  • Salt to taste

For Katachi Amti

  • Drained water from chana dal
  • Fresh coconut – ¼ cup
  • Garlic cloves – 10-12
  • Sesame seeds -2 tsp
  • Cumin seeds – 1 tsp
  • Curry leaves – 2 strands
  • Jaggery – 1 tsp
  • Some fresh coriander leaves
  • Lal tikhat / kanda lasun chutney – 3 tsp
  • Salt to taste

For Kanda Bhaji (Onion fritters)

  • Onion (big) – 1 (sliced)
  • Carom seeds – ½ tsp
  • Lal tikhat / kanda lasun chutney – 2 tsp
  • Turmeric powder – ¼ tsp
  • Besan / Gram flour – ½ cup
  • Some fresh coriander leaves
  • Salt to taste
  • Oil for frying

For Batatyachi Bhaji(Aloo sabzi)

  • Potato – 4 (boiled, peeled and cut into small cubes)
  • Onion – 1 (finely chopped)
  • Green chillies – 2-3 (finely chopped)
  • Curry leaves – 2 strands
  • Some coriander leaves
  • Oil – 1 tbsp
  • Mustard seeds – ½ tsp
  • Cumin seeds – ½ tsp
  • Sugar – 1 tsp
  • Salt to taste

For Vatli Dal (Ground chana dal)

  • Chana dal – 1 cup (soak for 4-5 hours)
  • Green chilies – 2
  • Some fresh coriander leaves
  • Sugar – 1 tsp
  • Tamarind pulp – 1 tbsp
  • Mustard seeds – ½ tsp
  • Cumin seeds – ½ tsp
  • Curry leaves – 5-6
  • Oil – ½ tsp
  • Salt to taste

How to make puran poli ?

  • Crush dry ginger (sunth) little bit and grind to a fine powder. Sift to remove coarse particles in it. You will need just a tsp of this powder while making puran (filling).

  • Wash chana dal thoroughly and add around 3 and ½ cups of water. Pressure cook until tender. It may take 4-5 whistles. Let the pressure goes off by itself.
  • In a big vessel, boil around 1 litre of water. Add cooked chana dal and let it cook again for 8-10 minutes.
  • Now drain out all the water from chana dal. We need this water for making ‘katachi amti’.

  • Put the vessel on a gas stove along with strained dal.
  • Add ½ tsp of salt.
  • Add jaggery and allow it to melt.
  • Add suth powder and cook again until mixture thickens, stirring occasionally.
  • Now puran is ready, allow it to cool down completely.

  • Strain the puran with the help of ‘Puran yantra’. (If not available, use big steel strainer.)

  • To make dough, sift wheat flour and add salt to taste.
  • Now start kneading the dough by adding little water at a time.
  • Knead it nicely to form soft dough. Cover it wet cloth and let it rest for 10-15 minutes.

  • Sprinkle little water at a time and knead the dough again until it becomes really soft. It may take around 15-20 minutes. Kneading dough nicely is a key to make nice and soft puran poli. Please refer video tutorial to see how to knead dough in detail.

  • Take a medium sized ball of dough and pat it in such a way that it gets bowl like shape.
  • Place the medium sized ball of stuffing (puran) in it and seal properly.

  • Dip into flour and roll it gently and evenly from all the sides.
  • Place it onto a hot griddle (tava) and roast it nicely from both the sides by applying oil.

How to make Katachi Amti ?

  • In a mortar and pestle, grind cumin seeds and sesame seeds to a coarse powder.
  • Add fresh coconut and 5-6 cloves of garlic and grind everything together to a coarse paste.

  • In a big vessel, heat oil.
  • Add mustard seeds, cumin seeds, curry leaves and remaining garlic (crushed). Saute until garlic turns light brown.
  • Add ground paste and saute for few seconds.
  • Add ‘lal tikhat’ / kanda lasun chutney and leftover water from chana dal.
  • Add salt to taste.
  • Add jaggery and coriander leaves.
  • Bring curry to boil and then allow it simmer on low heat for 15-20 minutes.
  • Now you can see, oil (kat) is floating on top.

  • Fry some ‘papad’ and ‘kuravadya’.

How to make kanda bhaji (Onion fritters) ?

  • In a sliced onion, add carom seeds, salt, lal tikhat / kanda lasun chutney and turmeric powder.
  • Mix everything together and add besan along with little water.
  • Mix well to make lump free batter.
  • Add some chopped coriander leaves and mix.
  • Take a spoonful of batter and drop it into hot oil.
  • Fry nicely from both the sides until they turn brown and crispy.
  • Take them out on paper towel.

How to make batatyachi bhaji (Aloo sabzi) ?

  • Boil the potatoes and cut them into small cubes.
  • In heated oil, add mustard seeds, cumin seeds, green chillies and curry leaves. Let them splutter.
  • Add onion and sauté till translucent.
  • Add turmeric powder and salt to taste.
  • Add potato cubes and mix well. Cook for 2-3 minutes on low heat, stirring constantly.
  • Add sugar and coriander leaves and mix well. Cover and switch off the heat.

How to make Valti Dal (ground chana dal) ?

  • In a soaked chana dal, add green chillies, coriander leaves, sugar, salt and tamarind pulp.
  • Grind it to a coarse paste.
  • In heated oil, add mustard seeds, cumin seeds and some curry leaves.
  • Allow them to splutter nicely and pour it on ground chana dal.
  • Mix well and chutney is ready.
