Here is the awesome lemon pickle (goad limbache lonche) recipe which is super quick and easy to make. Again this is my mom’s recipe which is hassle free and gets ready in no time. Another amazing thing about this pickle is it is oil free and it has shelf life of couple of months. Give it a try and let me know how you like it.
For making this pickle, you will need,
- Fresh Lemon – 6-7
- Sugar – 1 and ¼ cup
- Red chilli powder – 2 and ½ tbsp
- Pickle Masala – 2 tsp (you can use any kind of store bought pickle masala, I used mango pickle masala)
- Salt – 1 tsp (little more if needed)
How to make sweet lemon pickle?
Cut lemon into quarter and remove seeds. Grind them coarsely in a blender and add salt.
Cook the ground mixture on medium heat for 2-3 minutes. Keep stirring in between.
Then add sugar and again cook till mixture thickens. Keep stirring continuously to avoid burning at bottom. It may take 15-20 minutes.
Finally add red chilli powder and pickle masala. Mix well and cook on low heat for 4-5 minutes. Keep stirring continuously.
Switch off the heat and let it cool down completely.
Store it in an air tight container. Serve on second day. Pickle tastes good when it gets old.
