Ingredients

  • Thalipeeth bhajani flour – 4 cups
  • Kharda / Mirchi cha thecha – 3 tbsp
  • Garlic – 15-20 cloves
  • Some fresh coriander leaves (finely chopped)
  • Onion – ½ (finely chopped)
  • Turmeric powder – ½ tsp
  • Salt to taste
  • Oil for roasting the thaliipeeth
  • ‘Haladi chi pane’ / turmeric leaves (optional)

  • In a mortar and pestle, grind garlic to a coarse paste.

  • Mix ‘kharda / hirvya mirchi cha thecha’ with garlic paste.
  • Add chopped fresh coriander leaves and onion.
  • Add little salt (as thecha also contains substantial amount of salt).
  • Then add turmeric powder and mix with little water.

  • Sift bhajani flour to it.

  • Add little water at a time and knead it to soft dough.

  • Cover with kitchen towel and let it rest for 15 minutes.

  • Place clean cotton cloth or handkerchief on a rolling board. Sprinkle little water and make it wet.

  • Place one medium sized ball of the dough and roll it gently with rolling pin and then flatten it with wet hands.

  • Pat it from all the sides evenly, if dough is sticking to your hands again wet your fingers and then pat it.
  • Spread a tsp of oil in a hot pan / ‘tava’.

  • Lift the cloth with its lower corners and transfer it on to the pan.
  • Put few drops of water on the cloth and press your finger tips all over the thalipeeth gently.

  • Now slowly detach the cloth from thalipeeth.

  • Place ‘haladi che pan’ / haldi / turmeric leaves on thalipeeth and cover it. (*Turmeric leaves gives nice aroma to the thelipeeth but using them is optional.)

  • Cook covered for 3-4 minutes until edges of the thalipeeth turns brown and crispy.

  • Drizzle little oil on the edges and on the top as well.

  • Now flip and cook from other side as well.

  • Similar way, make rest of the thalipeeths.

How to make mugachi usal / mung beans usal?

Ingredients

  • Mung beans –1 cup (soaked overnight)
  • Onion – 1 (finely chopped)
  • Kanda lasun chutney – 1 tsp
  • Turmeric powder – ¼ tsp
  • Jaggery – ½ tsp
  • Some fresh coriander leaves (finely chopped)
  • Oil – 1 tbsp
  • Salt to taste

How to make Mugachi usal / Moong usal

  • Pressure cook mung beans until 2 whistles.
  • Heat a tbsp of oil in a pan.

  • Once oil is heated, add onion and sauté till light brown.

  • Then add cooked moong and mix well.

  • Add salt to taste,  kanda lasun masala and turmeric powder.

  • Add fresh coriander leaves and jaggery.
  • Mix well and cook covered for couple of minutes.

  • Serve thalipeeth with curd, mugachi usal, and kharda (mirchi cha thecha). Also put some ‘loni’ or butter on thalipeeth while serving.
